Easy Lemon Pie is sweet and creamy with just the right amount of tartness and super easy!  Perfect for those warmer months ahead.

 

 

Long time no post, yeah I know. So sorry!  Things have been crazy here getting ready for the end of the school year.  All school work and reports graded and recorded.  Next years curriculum already researched and bought.  Another year of homeschooling fails and successes under my belt.  I’m SOOOOO ready for school to be out.  That means more time to cook/bake/grill and blog!!!!  Sidenote: I won’t be the one grilling, after having a gas grill literally blow up in my face, I’ll leave that to the pro (LittleChefsDad), but I’ll enjoy the grilled food!!

In case the grill in the face comment got you all excited and wondering what happened, it’s pretty straight forward- it blew up in my face!  Someone said it was user error, which I’m sure it was, but geez louise, exploding grill + face= NOT FUN!

 

 

 

Anywhoo, this is my most favorite pie and it’s super easy because you just buy all the ingredients and mix them in a bowl and dump in a store bought pie crust!  Easy peasy!!  Even kids can make this one!  I’ve used fresh squeezed lemon juice and lemon juice from a container.  I couldn’t tell a big difference at all. But one thing I do add is fresh grated lemon zest, now that adds a wonderful punch!

 

 

I found this recipe at Allrecipes.com.  It’s been a staple in my recipe box for years now!  Try it out and you’ll love it too 🙂

 

Easy Lemon Pie
Ingredients
  • 1 (14oz) can sweetened condensed milk
  • ½ cup lemon juice
  • 1 (8oz) frozen whipped topping (Cool Whip), thawed
  • 1 (9") prepared graham cracker crust
Instructions
  1. In bowl, combine milk and lemon juice; mix till smooth (it will begin to thicken)
  2. Fold in cool whip topping
  3. Spoon into crust
  4. Chill in fridge

Cinnamon Rolls, egg free

There’s just something about a warm sweet dough mixture all rolled up with sugar and cinnamon inside and topped with a sweet glaze,  yumm!!!!!

 

 

There’s nothing more perfect than a Cinnamon Roll!  They were one of my most favorite things to eat!    If you can read and follow directions, then a few hours later you can have this perfect sweet treat in your hand! It’s hard to mess up cinnamon rolls, so don’t let the yeast scare you away!

I’ve fixed countless recipes claiming to be the best! In fact, this recipe is from thelittleredhen.com and the title is Best Ever Cinnamon Rolls.  So when I saw that title, it was a baking challenge I had to accept!

 

 

 

I think I’ve passed my love of cinnamon rolls down to LittleChef3.  Cinnamon Rolls are one of his favorite things! He doesn’t get them very often, so when he does he is very selective on which one he chooses first!  I’ve already shared the story of his love of cinnamon rolls, you can read it here in the Cinnamon Roll Cake recipe.  If I ever offer to bake something special for him, I already know what’s gonna come out of his little cute mouth  🙂

 

 

 

 

 

 

 

 

I greatly enjoy trying out new recipes.  Some I don’t dare budge on, but others, mainly yeast breads, I try out any new one I see that looks good!  This isn’t my usual go to cinnamon roll, I’ll post it the next time I make it, but it’s great nonetheless!  The kids said it was fantastic!  I found it interesting that it does not contain any eggs!  So if you’re having a sweet craving and are eggless, I’ve got you covered  😉

 

Cinnamon Rolls, egg free
Ingredients
  • 2½ teaspoons yeast (one package)
  • ¼ cup warm water
  • 4 cups all-purpose flour
  • ⅓ cup white sugar
  • ¼ cup butter, softened
  • 1 teaspoon salt
  • 1 cup warm milk
  • Filling:
  • ¼ cup butter, softened
  • ⅓ cup brown sugar
  • 2 TBLS cinnamon
  • Glaze:
  • ½ cup powdered sugar
  • 2 TBLS butter
  • milk
Instructions
  1. Dissolve the yeast in the ¼ cup water.
  2. Mix flour, sugar, and salt.
  3. Add softened butter and yeast mixture to the one cup of warm milk.
  4. Mix the liquid mixture with the dry ingredients.
  5. Mix well and knead until smooth. (Or knead with KA Mixer for 6-7 minutes)
  6. Put in a greased bowl and let rise for about an hour, till doubled in size.
  7. Punch down the dough and roll out into a rectangle.
  8. Spread with softened butter and then sprinkle generously with brown sugar and cinnamon mixture.
  9. Roll up and cut into rolls. Place in two greased 9 inch pans and let rise again, about an hour.
  10. Bake at 400 for 13-15 minutes.

This is my new favorite dessert! I could eat it everyday it’s that delicious! LittleChef1 has a slight addiction to it also. He has requested this to go along with his birthday meal. It’s that good my friends!!

Apple and Pear Crumble

Juicy apples and pears that naturally make the perfect amount of sweet liquid when baked, lie hidden underneath an oat crumble topping.

I’ve made apple crisp for years, but I never thought of adding pear to the equation. Boy was I missing out! That subtle addition compliments the apple so well. It makes my taste buds sing in harmony 😁

If you remember me mentioning in the Honey Oatmeal Bread recipe about the 14 pound bag of oats my Dad gave me, well, let’s just say I’m not even making a dent in it all this time later!

I’m gonna have to start making more bread and more No-Bake Oatmeal Cookies

Or, I can just continue to use this yummy recipe over and over again till all the oats are used up! Yes, great game plan 😊

We prefer to eat our Apple and Pear Crumble with some vanilla ice cream plopped on the top. Plain is good also!  You really can’t go wrong with this dessert.

Apple and Pear Crumble
Ingredients
  • Topping:
  • 1½ cups rolled oats
  • ½ cup all-purpose flour
  • ¾ cup brown sugar
  • ½ cup butter (1 stick),softened
  • Mixture:
  • 4 cups peeled and diced apples (6)
  • 4 cups peeled and diced pears (6)
  • 1½ cups brown sugar
  • 2 teaspoons ground cinnamon
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix oats, flour, ¾ cup brown sugar, and butter together in a bowl until crumbly.
  3. Mix apples, pears, 1½ cups brown sugar, and cinnamon together in a separate bowl; spread into the bottom of a 13x9-inch glass pan. Sprinkle oat mixture on top of apple-pear mixture.
  4. Bake in the preheated oven until the top is golden brown, about 40 minutes.

On a frugal note, I found the burlap in the picture on clearance for $.75!!  It was originally $8.00. Great savings!  So now I can go buy more apples and pears…..

So this post is what to do if you find yourself with leftover bread.  You know, a rare occurrence I'm sure. No need to throw that lonely leftover loaf of banana bread in the freezer, or worseaway!  😮   No!  Turn it into French Toast! Banana Bread French Toast takes regular french toast up a notch, or two! It smells unbelievable, so AMAZING!  I can promise you if your neighbors smell this cooking, they'll wanna come over for a  piece! So you can either do Plan A: put a pot of coffee on, or Tea, to serve alongside the Banana Bread French Toast.  Or Plan B: you need to run, lock the door, and shut the blinds and inhale all the French Toast by yourself and scream NO TOAST FOR YOU!! In your best Soup Nazi voice! Uh.... on second thought maybe Plan B should be removed because that sounds kinda weird and anti-social and I just want to promote happy thoughts here. Banana Bread French Toast
Ingredients
  • 1 loaf banana bread, thickly sliced
  • 2 eggs
  • ⅔ cup milk
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • fruit, syrup, chocolate drizzle (optional)
  • butter for skillet
Instructions
  1. Dry banana bread out in the oven on 375 degrees by baking a few minutes on EACH side
  2. Beat eggs; add milk
  3. stir in vanilla and cinnamon
  4. dip each slice of bread into wet mixture coating both sides evenly
  5. fry in a well buttered skillet for a few minutes, flip and cook till golden brown

5 Minute Fudge Brownies

These are my absolute favorite brownies!  The title is a tad misleading, don’t blame me I didn’t make it up 🙂  It simply means that it only takes 5 minutes to mix this batter up from scratch and get it in the oven!  How simple is that?  It’s just as quick and easy as a box mix and I can guarantee you it’s a whole lot tastier and healthier!  Now you know I’m no health nut, but have you ever glanced at the ingredients on a box of brownies from the store?  Its crazy!!!

My recipe only has 9. BIG difference!  I do not buy snacks for my kids, instead I homemake them.  It’s so much healthier, but also so much cheaper.  Being a family of 8, and I stay at home, we are on a strict food budget.  My kids get to enjoy fresh homemade snacks throughout the week.  You may be thinking I only have the time because I do stay at home.  I can assure you I’m rather busy, baby twins are a full time job alone!!  😉

That’s why my most favorite recipes are quick and easy. I found this recipe o100daysofrealfood.com. I’ve been making these for a couple years now and haven’t changed a thing about the recipe. Which says a whole lot right there! I make the kids brownies with white whole wheat, they can’t taste the difference. I stay away from full whole wheat in baked goods. Although I do have a favorite whole wheat bread I used to love. I may need to dig that recipe out and share it.

 

This recipe can easily be adapted for gluten free.  Just swap the flour out.  Funny thing is every single time I make me some gf brownies the kids always manage to eat mine too! They always weasel me out of them. It’s hard to say no to such cute little faces! I love nuts in mine and they claim they hate them, but that never deters them…..

As you can see from this picture they are thick, just the way I love my brownies!!

5 Minute Fudge Brownies
Ingredients
  • ¾ cup sugar
  • ½ cup all-purpose flour (I used white whole-wheat flour)
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • ¼ teaspoon baking powder
  • 1 stick (1/2 cup) melted butter
  • 2 eggs
  • 1 teaspoon vanilla extract
  • ¾ cup chocolate chips
  • nuts, optional
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Generously grease a 8X8 or 9X9 square baking dish
  3. In a large mixing bowl whisk together the sugar, flour, cocoa powder, salt, and baking powder. Make a well (hole) in the center and drop in the butter, eggs, and vanilla extract.
  4. Mix together thoroughly and then fold in the chocolate chips
  5. Add the brownie batter to the baking dish and flatten out the top into one even layer.
  6. Bake for about 28-30 minutes

LittleChefTip: To cut brownies, even while hot, use a plastic knife!

The original title was nlb’s Indescribably Delicious Banana Bread. I have no clue who nlb is, but I want to thank her/him very much for this recipe! It’s my most favorite banana bread of all time!!

This special recipe has been in my email inbox since 2002!!! It’s older than 5 of my kids! Back in the day before food blogs were the rage, to share recipes you could join a recipe loop through E-mail. This famous recipe was SO popular that everyone requested it over and over. So they started putting the initials nlb on it. Those 3 little letters indicated that this was THE banana bread recipe you wanted to try, that you must try!

What sets this apart from all other banana breads is the topping. The loaf gets dressed with a delicious, sweet and nutty mixture.

My kids prefer theirs plain 😨. What can I say, they don’t appreciate the wonderful taste of nuts yet. So you can see in the background a few slices of naked bread on the plate. LOL

 

Indescribably Delicious Banana Bread

Serves: 2 loaves

Ingredients
  • Batter:
  • 1 cup butter (2 sticks)
  • 1½ cups sugar
  • 2 eggs
  • 4 very ripe bananas, mashed * or 1¾ c
  • 1 tsp. pure vanilla extract
  • ¼ cup buttermilk
  • 2 cups all purpose flour
  • 1½ tsp. baking soda
  • 1 tsp. salt
  • Topping, put on after baking:
  • 6 tablespoons butter
  • 10 tablespoons brown sugar
  • ¼ cup PLUS 1 Tablespoon milk
  • 1 cup or more, chopped walnuts (pecans work
  • well too)
Instructions
  1. Preheat oven to 350°.
  2. Cream butter and sugar.
  3. Mash bananas, beat eggs and add to the bananas with vanilla and buttermilk; mix well and add to creamed butter and sugar.
  4. Sift together flour, soda and salt.
  5. Add to banana mixture, beat well.
  6. Pour into 2 greased and floured 9x5x3-inch loaf pans.
  7. Bake 45 to 50 minutes or until bread pulls away from sides of pan. Cool.
  8. (Note: start checking with toothpick after 35 minutes -- you don't want the bread to overbake.)
  9. To prepare topping: Melt butter in saucepan.
  10. Add sugar and milk.
  11. Cook until very syrupy.
  12. Remove from heat and add chopped nuts.
  13. Pour over bread spreading to all the corners
  14. and place under broiler until bubbly and brown. Watch closely.

Normally all my ripe bananas go to Banana Muffins, but this time I wanted to make the kids banana bread for a snack. It tends to last longer than 24 muffins, go figure!  They were a little miffed that I put nuts on one loaf this time, but how could I blog it and not show you the actual food? They got over it pretty quick. 😁

This is my go to chocolate cake. It's chocolate, it's extreme, do I really need to say more?? I know your mouth is salivating right now just by those words! My kids love this cake and it's the most requested birthday cake by them. I always make them a cake on their actual birthday and one, or two, at their party. Their party cake always includes white to accommodate other tastes, but at home, just for them, chocolate rules!!

The house smelled SOOOOO good today! It's still hard for me to believe I have been sugar free for 26 days in a row now during my Whole30, so anything is possible! I told you all I was dying to bake again. I couldn't wait till next week. I know the kids sure are happy as larks about my impatience. 😀

    I've been making this cake for years and found it on Allrecipes.com. I also use it as a base chocolate cake to build upon and change things up. Creamy peanut butter cream cheese filling is so good!!      
Extreme Chocolate Cake
A rich decadent chocolate cake that will soon become your favorite!
Ingredients
  • 2 cups white sugar
  • 1¾ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1½ teaspoons baking soda
  • 1½ teaspoons baking powder
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • ICING:
  • ¾ cup butter, softened
  • 1½ cups unsweetened cocoa powder
  • 5⅓ cups confectioners' sugar
  • ⅔ cup milk
  • 1 teaspoon vanilla extract
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch cake pans.
  2. Use the first set of ingredients to make the cake. In a medium bowl, stir together the sugar, flour, cocoa, baking soda, baking powder and salt. Add the eggs, milk, oil and vanilla, mix for 3 minutes with an electric mixer. Stir in the boiling water by hand. Pour evenly into the two prepared pans.
  3. Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted comes out clean. Cool for 10 minutes before removing from pans to cool completely.
  4. To make the frosting, use the second set of ingredients. Cream butter until light and fluffy. Stir in the cocoa and confectioners' sugar alternately with the milk and vanilla. Beat to a spreading consistency.
  5. Split the layers of cooled cake horizontally, cover the top of each layer with frosting, then stack them onto a serving plate. Frost the outside of the cake.

I also love to just run my spatula along the icing to kinda mess it up.  I know that sounds bizarre, but it’s a signature look for all homemade cakes of yesteryear! When women proudly adorned aprons and always had a cake waiting in the cake saver for their loved ones.  Perfection is not the goal here, made with love is 😉

Chocolate Pudding is just good no matter how you eat it, warm or cold.  But there’s something about eating hot, thick pudding right off the stove that makes it a comfort dessert!  Growing up I remember my Mom making coconut pudding.  It’s been probably over 25 years or longer since I ate it, but I still remember the taste and smell.  It really doesn’t matter if it was from a box, like my Mom’s was, or homemade like I make for my kids, memories are memories and they should be made and cherished.

This recipe really is quick and easy, my favorite kind!   It comes together in less than 10 minutes with everyday common pantry ingredients. The addition of cornstarch thickens the pudding beautifully.  I had LittleChef4 hold the spoon so you could see the thickness, you gotta love little hands eager to help ❤

If you’re looking for a fast chocolate fix on a cold night, this will satisfy that craving!

 

Warm Chocolate Pudding
This is a Hershey's recipe.
Ingredients
  • ⅔ cup sugar
  • ¼ cup Unsweetened Cocoa Powder
  • 3 tablespoons cornstarch
  • ¼ teaspoon salt
  • 2-1/4 cups milk
  • 2 tablespoons butter or margarine
  • 1 teaspoon vanilla extract
Instructions
  1. Stir together sugar, cocoa, cornstarch and salt in medium saucepan; gradually stir in milk.
  2. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; stir in butter and vanilla.
  3. Pour into individual dessert dishes. To avoid a skin from forming on top, press plastic wrap directly onto surface; serve warm or refrigerate at least 2 hours.
  4. Garnish with whipped topping, if desired. 4 servings.

A sweet Creamy Fruit Dip that is just perfect for your favorite fruit!  This dish alone makes me look forward to summer! And it only has 3 ingredients!!

 

 

I’ve always loved strawberries and pineapples! Those are my most favorite fruits to eat with this dip.  But don’t worry, if strawberries and pineapples aren’t your thing!  This creamy fruit dip goes well with ANY fruit, yes it’s that kind of dip!

I’m lucky and have kids that will eat fruit without dip. But let’s be honest, and just between us,  it’s better with dip 😉

I’ve been making this delicious dip for many years now.  I originally thought I found it on my favorite site, allrecipes, OR it could’ve came from my brother’s ex-wife’s grandma.  Say that last part 3 times real fast, a tongue twister, LOL!  At least when someone divorces in the family, you can hang on to the recipes! HA!!  Moving on before I get in trouble…

I always put this Dip in my Pampered Chef divided container. Whenever the kids see me pull it out they know what’s coming 😊

 

 

 

 

 

Don’t you just love the cute little sword appetizers?  When you have all boys, you just naturally gravitate towards boyish things.  I think they’re cute and fun, the kids think SWORD FIGHT!!  I bought them to pack in the kids lunches when they attended a one day a week school co-op (we homeschool).  I guess I’ll dig them back out when the next semester starts up!  Whether you use a sword appetizer toothpick, an old plain toothpick, or just your hands picking up the fresh fruit, you need to start dipping some yummy fresh fruit into this dip, like right now!

After you fix it, I bet you’ll be sneaking bites even without fruit, it’s that tasty!!   Don’t say I didn’t warn you 🙂

 

 

 

 

 

 

Creamy Fruit Dip
Ingredients
  • 16 oz. Cream cheese, softened
  • - Large jar Marshmallow creme, 13 oz.
  • -2 tsp vanilla extract
Instructions
  1. Mix cream cheese well; add marshmallow creme
  2. stir in vanilla; beat till creamy and smooth
  3. store in refrigerator

Mmmmm, Fudgy Brownies! My kids love brownies and I love that they are fast and easy.  As you may have noticed before,  those are my favorite recipes! I have a regular brownie recipe, but I was on the hunt for one that tastes like the one on CiCi’s pizza buffet (gasp). I haven’t eaten there in over 4 years and when I did,  I didn’t care for the brownies, nor the pizza for that matter.  But my kids love it and eat there whenever they go shopping alone with their Dad (LittleChefsDad).  They don’t get it alot so it’s a very special treat to them. LittleChef3 has asked and asked for me to try and duplicate their infamous brownies. Who knew I’d have so much trouble doing that?? He said this recipe didn’t taste exactly like CiCi’s, but was still awesome.

When my other kids had to stop eating them because they were too rich, I suspected they were very fudgy.  I can’t begin to tell you how incredible the house smelled and how bad I wanted to be the one biting into those brownies! I may have to try some out with GF flour so I can sample this recipe!

I asked the kids if they liked the Fudgy Brownies better than our old stand by recipe, they all agreed this one was excellent too.  LittleChef2 said he didn’t know, he didn’t remember exactly what the old one tastes like. Yeah right!  I guess I will have to do our old one and let them compare. Nice play my little food lover. Score one for the kids!!

LittleChefTip: To get a clean cut on brownies, use a plastic knife.  Yes, seriously! It really works, even on hot brownies.  I don’t know why, but I’m glad it does:-)

 

 

 

Fudgy Brownies
Ingredients
  • 1 cup butter, melted
  • 3 cups white sugar
  • 1 tablespoon vanilla extract
  • 4 eggs
  • 1½ cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 1 cup semisweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish.
  2. Combine the melted butter, sugar, and vanilla in a large bowl.
  3. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
  4. Sift the flour, cocoa powder, and salt in a bowl.
  5. Gradually stir flour mixture into the egg mixture until blended. Stir in the chocolate morsels.
  6. Spread the batter evenly into the prepared baking dish.
  7. Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes.
  8. Remove, and cool pan on wire rack before cutting.
