White Chicken Chili (Slow-Cooker OR Instant Pot)

Say Hello to my new favorite food in a bowl!  Since the original title was chili, I left it as that, but in my head I think of it as soup!  So white chicken chili, white chicken soup, whatever you call it, you must try it!!  I was first introduced to this amazing “chili” at my surprise 40th birthday party.  Since I hate surprises, and my good friends know that, it was a risk they were willing to take and it ended up being a great day!  I was in my 1st trimester pregnancy with the twins and I was sick and starving all day long!  So not a good feeling!!  Even though I had been pregnant 5 times before, the twin pregnancy made me feel like a first timer again!  Everything was different and the nausea and hunger was greatly intensified!  Betcha thought I was gonna say DOUBLED,  huh?  LOL!  This party was catered especially for my favorite gluten free foods.  I felt so loved!!  My dear friend Amber, even had my favorite Creamy Artichoke and Spinach Dip that LittleChefsDad gave her the recipe for, and she even made a cake out of my favorite gf candy bars. Gotta love an amazing friend like that!! Among other tasty morsels, my good friend Brooke brought this amazing chili in a crock-pot!  It was love at first bite!!!!  Nowadays I make it in my new toy, the Instant Pot.  But its been fixed many times in my old faithful Elite Pressure Cooker. Just cook 22 minutes using the chicken setting.

 

 

Brooke is my friend that I keep bugging to start a blog.  She’s doing the world a great disservice by not having her own blog! She’s the type of person that is naturally funny, humble, kind, smart and when you befriend her, you feel like you’ve been friends forever!!  She has the cutest adorable little laugh and most importantly, she totally gets me.  All of my weird and crazy personality traits 😉

So see why you would want to read a blog by her?? I know I have intrigued your interest about my friend.  🙂  Don’t worry, when, if, she does, I’ll let you all know.

She found the recipe on my most favorite recipe site, Allrecipes.com. Click on the bold word and it will take you to the original recipe. I have modified it somewhat, but I still make it both ways. It’s just an all around great recipe! I like to eat my bowlful with sour cream, shredded cheddar cheese and cilantro. And if I’m being fully honest, Doritos find their way into my bowl.  They’re sneaky like that 😉

White Chicken Chili (Slow Cooker)
White Chicken Chili that can easily be made in a Slow Cooker or Instant Pot.
Ingredients
  • 1 (24 ounce) jar green salsa (salsa verde)
  • 2 (14.5 ounce) cans diced tomatoes
  • 1 (10 ounce) can Rotel
  • 2 (15 ounce) cans white beans, drained
  • 4 cups Homemade Chicken Broth OR 2 (14.5 ounce) cans chicken broth
  • 1 (14 ounce) can corn, drained
  • 1 onion, chopped
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • salt and ground black pepper to taste
  • 3 skinless, boneless chicken breasts
Instructions
  1. Mix green salsa, diced tomatoes, Rotel, white beans, chicken broth, corn, onion, oregano, cumin, salt, and black pepper together in a slow cooker.
  2. Lay chicken breasts on top of the mixture; turn to coat
  3. Cook on Low until the chicken shreds easily with 2 forks, 6 to 8 hours.
  4. Remove chicken to a cutting board and shred completely; return slow cooker and stir.

Another soup recipe, but it’s still hot outside you say.  Yes, I know that, but you will thank me when the temperature drops and you have this quick and easy Chicken Noodle Soup to fix! Cool weather is just right around the corner.  I love fall, it’s the only time of the year I want to clean and bake.  I bake all the time but it’s strange for me to want to deep clean the house.  I won’t even begin to tell you how many messes the kids make.  I thought it got better when they were older, I was sadly mistaken, deceived, whatever word you want to use.  As of right now the living room floor is totally picked up!  I want to take a picture and send it to my friend Amber who dropped some books off the other day when we were purging all the kids clothes.  Like ALL their clothing was on the living room floor. She has been scarred for life 🙂

Why is it noone ever shows up when your house is clean? Oh wait, because my house is only clean like 1 hour of the day!  Seriously, it’s scary what the kids can do to our house in less than 24 hours, and since we homeschool, they’re always here to make messes.  Maybe I should spend less time blogging and more time teaching my kids to clean since obviously I have failed at that.  Sorry for the rant.  I try to control myself and be positive, but sometimes Negative Nelly comes out.  She busted out and is loud today, so blame her.  LOL!

Moving on to the recipe……

 This is LittleChef2’s most requested soup and lucky for me it’s fast if you use already cooked chicken.  He can eat the whole pot all by himself!  I use homemade chicken broth that I keep frozen.  The flavor is amazing!

Quick Chicken Noodle Soup

The thing I love most about fixing anything at home is the customization.  You add what you want, take out what you don’t want.  So please feel free to add celery, more vegetables, different herbs, or take out the carrots.  One thing you’ll never see on this blog is a recipe with celery, unless it’s a typo. I hate, detest, loathe, despise, dislike celery, even the smell of it makes me gag.  I think you get the picture here…. I’m still trying to recall what horrible recipe I ate celery in to make me have such hatred against it.  Wish I had a hatred for french fries, my waist would thank me. 🙂

If you have an amazing recipe that INCLUDES celery, please let me know in the comments and I’ll actually try it.  Yeah, I’m fearless like that, LOL!

Quick and Easy Chicken Noodle Soup
In a pinch you can use leftover chicken, rotisserie chicken, or pre-cooked, seasoned bag chicken
Ingredients
  • 2 TBLS butter
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 6 cups chicken broth (48 oz)
  • 1-2 cooked chicken breast, cubed
  • 2 cups egg noodles
  • 1 carrot, sliced
  • ½ tsp dried basil
  • ½ tsp dried oregano
  • ¼ tsp thyme
  • ¾ tsp salt
  • ¼ tsp pepper
Instructions
  1. Saute onion in butter, around 4 minutes; add garlic, cook a couple minutes - do not burn garlic
  2. Pour in chicken broth; stir in rest of ingredients
  3. Bring to a boil; reduce heat and simmer 20 minutes till noodles are done.

Who says you can’t have soup in summer?  It seems it’s an unwritten rule that one cannot have hot soup when it’s hot outside. I disagree.

This soup is rich and satisfying, a stick to your ribs dish. Pair with a salad, and you have a wonderful meal.  Sure you can always balance it out even further with a bread or roll, but it’s not necessary.Delicious Cheeseburger Soup

I can’t remember where I found this recipe at, but I do remember the first time I made it. I loved it and so did LittleChef2! I wondered why I had never heard of this delicious soup before.  Growing up we always had meat and potatoes for dinner, and I do mean always! This soup easily qualifies for that and it’s quick and easy.  My two favorite things!

I tinkered with the recipe and here’s my take on it. I hope you try it out even if the thermostat is heating up!

Cheeseburger Soup
Ingredients
  • 1½ lbs ground beef
  • 1 small onion, diced
  • 1 carrot,shredded
  • 1 tsp basil
  • 1 tsp parsley
  • ½ tsp garlic powder
  • 3 cups chicken broth
  • 5 potatoes, diced
  • 16 oz Velvetta Cheese, cubed
  • 1½ cups milk
  • 1 tsp salt
  • ½ tsp pepper
  • ¼ cup sour cream
Instructions
  1. Brown ground beef with onion; add carrots and seasonings
  2. Add chicken broth and potatoes; cook about 12 min till potatoes are tender
  3. Add Velvetta cheese, milk, salt and pepper
  4. Stir till cheese melts, then add sour cream
  5. Remove from heat

Top with additional sour cream and cheese, or leave plain.Cheesy Burger Soup

Baked Potato Soup

This is probably the quickest and easiest soup I fix!  If you read yesterday’s post about the Grilled Chicken Tacos, then you’ll understand exactly why this soup containing baked potatoes is so quick.  It’s LittleChef2’s favorite soup.  He knows every time LittleChefsDad grills, soup is on the menu the next day. I love that it’s gluten free.

I always double the recipe and offer toppings. When time permits, bacon is always a hit!

Toppings: cooked chopped bacon, green onions, sour cream, extra cheese

Baked Potato Soup

A creamy hearty soup that is a family favorite. Feel free to substitute heavy cream for the milk.
Ingredients
  • 3 to 4 potatoes, cooked (peeled and diced)
  • 3½ cups milk
  • 4 ounces cream cheese
  • 2 TBLS butter
  • 1½ tsp salt
  • ¼ tsp garlic powder
  • ½ tsp pepper
  • 4 ounces cheddar cheese, shredded
Instructions
  1. Combine all ingredients, minus cooked potatoes, in saucepan.
  2. Stir till cream cheese melts. Do not bring to boil.
  3. Add potatoes and mix in.
