I have for you today, the most amazing, incredible, BEST Instant Pot Mexican Rice you’ll ever fix at home! Rice made conveniently in your Instant Pot!!
 

That’s right my friends! Restaurant style Mexican Rice made by you. So now you can eat as much as you want, whenever you want! You may not like me after this… 🥰

When I go out to eat, I love to eat Mexican rice. It’s always been one of my favorites!! In fact, if my particular dish doesn’t come with it, then I always order it as a side dish. Nachos just don’t taste right without rice, am I right??

Sadly, I haven’t eaten at a Mexican restaurant since January. Sure, we easily could, but per doctors orders, we’re limiting outings and interactions due to one of our sons. He’s doing soooo much better, and has come a long way! This time last year we were scared to death thinking he had Crohn’s. So I’m definitely praising the Lord for his improvement!

Anyway, Mexican cuisine is a family favorite and I never ever could figure the rice out, no joke! During quarantine I was determined to try out as many recipes as I had to until I found a comparable one to the restaurant version! Well I tried many recipes claiming to be the best! Everyone and their brother has a best recipe apparently 🤣.

It wasn’t until I stumbled upon lillunas recipe for spanish rice that made me take notice! It was just what we were looking for!! It got rave reviews from the kids and so I fixed it the next day, twice. And then the next day and the next…. I kid you not! If you wanna know who bought up 75 lbs of rice during quarantine, well I would have to raise my hand 🤣. We are a good 15 lbs heavier just from this recipe, I guarantee it 🥰

As per any recipe, I tweaked it to our taste buds and found a version my kids love the best! Being as I wasn’t familiar with cooking long grain rice on the stovetop, I did it in the Instant pot from the get go!

I must admit, I bought a 2nd Instant Pot during quarantine and it was one of the best purchases I’ve ever made! I couldn’t believe how much more advanced the new one is, I’m so in love!! If you’re looking for your 1st Instant Pot, or even thinking about a 2nd one, let me tell you, hands down, the Evo Duo is the best one on the market!! It cooks really anything, but my most favs are roasts, chicken dishes,  beans, yogurt, even SCD 24 hour yogurt, talk about insanely healthy probiotics!! It proofs bread dough, yay!! And most importantly, it cooks my beloved rice in 12 minutes! Yep, only 12 minutes till hot and fluffy rice awaits me!

Okay, I’m off topic a little bit, but seriously, it’s a must-have appliance in your kitchen!! I Instant )ot everything!! Did you know you can pop popcorn in the instant pot? Even make potato salad (the potatoes AND hard boiled eggs at the same time!) Insane I’m telling you! Trust me when I say I’ve had alot of time to get to know my new Evo Duo, it’s been used alot!!

Moving on…. I finally discovered what had been missing from all the other recipes I tried. You have to brown the rice before you add liquid to it! I never knew that was the secret!!

My kids actually fight over this rice, it’s that good! I make it with typical mexican food like fajitas and tacos. Having a turkey and cheese sandwich? Make rice! Sure, totally goes with anything 😂.

What you’ll need to make this Amazing Mexican Rice:

  • 2 cups Long Grain White Rice, rinsed
  • 1/8-1/4 cup veg. oil
  • 1 heaping tsp minced garlic
  • 1 tsp salt
  • 1 tsp Cajun Seasoning
  • 8 oz. tomato sauce
  • 1 chicken bouillon cube
  • 4 cups water

Tips:

  • Always rinse your rice!  Rinsing with plain water alone removes 80% of arsenic that is naturally found in rice!
  • Rinsing means exposing the grains to water until that water runs clear, a task that requires more of a thorough washing. At first, the tap water will appear cloudy. But soon, that water will lose its milky appearance and turn clear. When it does, you’re done rinsing!

The easiest way to rinse your rice is to use a fine mesh strainer, like this one.

Bonus: it’s also what I use to strain homemade broths!

Equipment

  • Instant Pot

Ingredients
  

  • 2 cups Long Grain White Rice rinsed
  • 1/8-1/4 cup vegetable oil
  • 1 heaping tsp minced garlic
  • 1 tsp salt
  • 1 tsp Cajun Seasoning
  • 8 oz tomato sauce
  • 1 cube chicken bouillon
  • 4 cups water

Instructions
 

  • Place chicken bouillon cube in water;;heat on stovetop or microwave 4 minutes till hot. Set aside
  • Rinse Rice, drain as much water as possible
  • Using Saute function on IP, add veg oil; when hot, add rice
  • Cook rice until golden brown; stirring constantly
  • When rice is browned, add garlic and seasonings;cook for about 30 seconds, do not burn garlic
  • Add broth and tomato sauce, stir
  • Hit cancel to stop saute
  • Use Rice selection, select 12 minutes on timer; Hit Start button
  • When done, depressurize immediately and fluff with fork;
