Banana Bread with Fresh Milled Flour that's soft, moist, and easy to make. This whole wheat banana bread uses soft white wheat and spelt for the perfect texture.
2cupsfreshly milled soft white wheat flour(1 cup soft white and 1 cup Spelt)
1teaspoonbaking soda
1/2teaspoonsalt
2teaspoonscinnamon
1/2cupmelted butter(1 stick)
1cupbrown sugar
1/3cupwhite sugar
2large eggsroom temperature
2teaspoonsvanilla extract
1 1/2cupsmashed ripe bananas(about 3 large bananas)
1/4cupsour cream
Instructions
Preheat the oven to 350°F. Grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the freshly milled spelt flour, baking soda, salt, and cinnamon.2 cups freshly milled soft white wheat flour,1 teaspoon baking soda,1/2 teaspoon salt,2 teaspoons cinnamon.
In a large bowl, whisk the melted butter, brown sugar and white sugar until combined.1/2 cup melted butter,1 cup brown sugar,1/3 cup white sugar.
Add the eggs and vanilla extract and whisk until smooth.2 large eggs,2 teaspoons vanilla extract.
Stir in the mashed bananas and sour cream until fully incorporated.1 1/2 cups mashed ripe bananas,1/4 cup sour cream.
Add the dry ingredients to the wet ingredients and stir just until no dry flour remains. Do not over mix.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Allow the bread to cool in the pan for 15 minutes before transferring it to a wire rack to cool completely.
Notes
Note: For the sweetest banana bread, use very ripe bananas with lots of dark spots or mostly brown peels. Less ripe bananas will make the loaf less sweet.
