2cupschicken broth
2cupsheavy cream
4cupschopped broccoli
1cupshredded carrots
1/2teaspoonsalt
1/2tspgarlic powder
1/4teaspoonblack pepper
1/4teaspoondry mustard
2cupsfreshly shredded sharp cheddar cheese
Instructions
Melt the butter in a large pot over medium heat. Add the onion and cook until softened.4 tablespoons butter,1 medium yellow onion.
Sprinkle in the flour and cook for 1–2 minutes, stirring constantly.1/4 cup flour.
Gradually whisk in the chicken broth and heavy cream until smooth.2 cups chicken broth,2 cups heavy cream.
Add the broccoli, carrots, salt, garlic powder, pepper, and dry mustard. Simmer gently, partially covered, for 15–20 minutes, until the vegetables are tender.4 cups chopped broccoli,1 cup shredded carrots,1/2 teaspoon salt,1/2 tsp garlic powder,1/4 teaspoon black pepper,1/4 teaspoon dry mustard.
Reduce the heat to low. Let the soup cool slightly, then gradually stir in the cheddar cheese until melted. Don't let it boil after adding the cheese.2 cups freshly shredded sharp cheddar cheese
Notes
PRO TIP: Always shred your own cheddar cheese from a block! It melts much more smoothly than pre-shredded cheese. Reduce the heat to low before adding it, and never let the soup boil afterward, or the cheese can become grainy. For a Smooth Soup: If you prefer a smooth broccoli cheddar soup without chunks of vegetables, use an immersion blender to puree the soup after the broccoli and carrots are tender, but before adding the cheddar cheese.
