Preheat oven to 325°F. Line an 8x8-inch baking pan with parchment paper.
In a large bowl, stir together the oats, einkorn flour, and salt.2 cups old-fashioned rolled oats,1 cup freshly milled einkorn flour,1/2 teaspoon salt.
In a separate bowl, whisk together the honey, melted butter, brown sugar, and vanilla until combined.1/2 cup honey,1/3 cup butter,1/4 cup packed brown sugar,1 teaspoon vanilla extract.
Pour the wet ingredients into the dry ingredients and stir until coated. Fold in chocolate chips (or you favorite mix-ins).1/2 cup chocolate chips.
Press the mixture very firmly and evenly into the prepared pan.
Bake for 22 to 25 minutes, or until the edges are lightly golden brown.
Cool completely for at least 1 hour before slicing into bars.

Press the mixture down very firmly before baking. This helps the granola bars hold together better after cooling.
