Instructions
Preheat oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
Whisk together the freshly milled flour, baking powder, sugar, salt, and garlic powder in a large mixing bowl. 278 g freshly milled soft white wheat flour (2 1/4 cups),11 g baking powder (1 Tbls),4 g granulated sugar (1 tsp),6 g salt (1 tsp),4 g garlic powder (1 tsp).
Grate the cold butter right into the flour mixture. Gently stir to combine.6 tablespoons cold butter.
Stir in the shredded cheddar cheese.65 g shredded sharp cheddar cheese (1 1/4 cups).
Cheddar cheese: For the most accurate results, great the cheddar fresh from a block. My 1 1/4 cups of freshly grated cheddar weighed 65 grams. Bagged pre-shredded cheese may weigh differently by volume.
Add 3/4 cup of the buttermilk and gently stir until the dough begins to come together. Add the remaining buttermilk a little at a time until the dough is thick, soft, and scoopable.1 1/4 cups cold buttermilk.
Let the dough rest for 5 minutes to allow the freshly milled flour to hydrate. If it becomes too stiff, stir in another tablespoon of buttermilk.
Scoop the dough into 10 portions and place them on the prepared baking sheet.
Bake for 12–14 minutes, or until the biscuits are set and lightly golden.
Combine the melted butter, garlic powder, and dried parsley. Brush the mixture generously over the hot biscuits and serve warm.3 tablespoons butter,2 g garlic powder (1/2 tsp),1 g dried parsley (1 tsp).

My #1 Tip
Use real, whole-fat buttermilk! It’s thicker and richer and helps give these biscuits their tender texture. I like Prairie Farms whole buttermilk. I don’t recommend using milk mixed with vinegar because it simply isn’t the same as real buttermilk, especially in biscuits.
