Fresh Milled Flour Cheesy Breadsticks are soft, cheesy whole wheat breadsticks made with spelt and brushed with garlic butter. Ready in 30 minutes!

- 3/4 cup warm water, 105-110°F
- 7 g active dry yeast (2 tsp)
- 14 g honey (2 tsp)
- 2 Tbsp butter, melted
- 286 g freshly milled spelt flour (2 1/3 cup)
- 5 g
salt (1 tsp)
- 2 g garlic powder (1/2 tsp)
- 1 g Italian seasoning (1/2 tsp)
Cheese
- 2 cups freshly shredded mozzarella cheese
Garlic Butter Topping
- 1/4 cup butter, melted
- 4 g garlic powder (1 tsp)
- 29 g grated Parmesan cheese (1/4 cup)
- 1 g Italian seasoning (1 tsp)
Instructions
- Preheat oven to 450°F. Line a large baking sheet with parchment paper.
- Combine the warm water, active dry yeast, and honey. Let it sit for about 5 minutes, until foamy. 3/4 cup warm water, 105-110°F,7 g active dry yeast (2 tsp),14 g honey (2 tsp).

,2 g garlic powder (1/2 tsp),1 g Italian seasoning (1/2 tsp). - Turn the dough onto a lightly floured surface and knead for a few minutes, until it forms a soft, smooth dough.
- Press or roll the dough into approximately a 15x10-inch rectangle on the prepared baking sheet.
- Sprinkle the mozzarella evenly over the dough.2 cups freshly shredded mozzarella cheese
- Bake for 10-12 minutes, until the crust is cooked through and lightly golden around the edges and the cheese begins to brown.

- Let them sit for a few minutes before cutting into 16 breadsticks. Serve warm.
Notes
Pro Tip: Don't over knead the dough. Spelt develops quickly and doesn't need a long kneading time. Knead it just until the dough is soft and smooth for tender breadsticks.
