Instructions
Preheat oven to 375°F. Line a 12-cup muffin pan with paper liners.
In a medium bowl, whisk together the freshly milled soft white wheat flour, baking powder, baking soda, salt, cinnamon, and nutmeg.270 g freshly milled soft white wheat flour (2 1/4 cups),8 g baking powder (2 tsp),3 g baking soda (1/2 tsp),2 g salt (1/2 tsp),2 g ground cinnamon (1 tsp),1 g ground nutmeg (1/4 tsp).
In a large bowl, whisk the sugar and eggs until well combined. Add the buttermilk, melted butter, and vanilla and whisk until combined.122 g granulated sugar (1/2 cup + 2 Tbsp),2 large eggs,215 g buttermilk (3/4 cup + 1 Tbsp),85 g butter (6 Tbsp),melted and slightly cooled ,10 g vanilla extract (2 tsp).
Add the dry ingredients to the wet ingredients. Gently fold just until no dry flour remains. Do not over mix.
Let the batter rest for 5 minutes to allow the freshly milled flour to hydrate.
Divide the batter evenly between the 12 paper liners.
Bake for 15–18 minutes, or until the muffins are risen and a toothpick inserted into the center comes out clean or with a few moist crumbs.
Allow the muffins to cool in the pan for 5 minutes, then transfer them to a cooling rack.
Place the melted butter in a shallow bowl and stir the sugar and cinnamon together in a separate shallow bowl.
