Instructions
Combine the warm water, yeast, and honey in the bowl of a stand mixer. Let sit for 10 minutes, or until foamy.1 1/2 cups warm water (12 ounces),1 tablespoon active dry yeast (13 g),1/2 cup honey (156 g)
Add the eggs, softened butter, salt, and freshly milled flour. Mix until no dry flour remains. Cover and let the dough rest for 15 minutes.2 large eggs (117 g total),4 tablespoons butter ,2 teaspoons salt (14 g), 5- 5 3/4 cups freshly milled hard white wheat flour (794 g).
Knead for 8 to 10 minutes, until the dough is smooth, elastic, and still slightly tacky.
Cover and let rise until doubled, about 45 minutes.
Divide the dough into 24 equal pieces (about 66 g each). Shape into smooth rolls on a nonstick pastry mat without adding extra flour. Place on the prepared pan, cover, and let rise until puffy and nearly doubled, about 35 to 45 minutes.
Bake at 350°F for 18 to 20 minutes, or until golden brown. Brush with melted butter while warm, if desired.
Notes
Tip: The dough should clean the sides of the bowl but still feel soft and slightly tacky. If it's sticking heavily, add more flour 1 tablespoon at a time. Avoid adding too much flour, or your rolls won't be as light and fluffy.
