Instructions
In a medium bowl, whisk together the freshly milled flour, oats, cornstarch, baking soda, and salt.
In a separate bowl, beat the softened butter, brown sugar, and granulated sugar until creamy.
Add the egg and vanilla and mix until well combined.
Add the dry ingredients to the butter mixture and mix just until combined. Fold in the chocolate chips.
Cover the cookie dough and refrigerate for 30 minutes.
Preheat the oven to 350°F and line a baking sheet with parchment paper.
Use a medium cookie scoop to portion the chilled dough. With clean hands, gently roll each portion into a smooth ball, then place them about 2 inches apart on the prepared baking sheet.
Bake for 9 to 11 minutes, until the edges are lightly golden and the centers still look slightly underdone.
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
