Beat butter and brown sugar in large bowl until fluffy. Add molasses, egg, and vanilla; beat until well combined. 1 cup butter,1 cup packed brown sugar,1/4 cup molasses,1 large egg,2 teaspoons vanilla.
Mix flour, baking powder, cinnamon, ginger, nutmeg, and salt in medium bowl. 3 cups all-purpose flour,2 teaspoons baking powder,1 1/2 teaspoons cinnamon,1/2 teaspoon ginger,1/4 teaspoon nutmeg,1/2 teaspoon salt.
Add flour mixture to butter mixture and blend until dough comes together. Do not over mix.
Divide dough in half and flatten each half into a disk. Wrap in plastic and refrigerate 1 hour.
Heat oven to 375°. Roll dough on floured surface to 1/4-inch thickness. Cut with cookie cutters and place on baking sheets lined with parchment paper, 2 inches apart.
Bake 8 to 10 minutes until edges are set and lightly golden. Cool on baking sheets 2 minutes, then remove to wire rack. Cool completely before decorating.
Notes
For easy decorating, I used Great Value Cookie Icing for the white and Great Value Writing Icing for the red and green. It’s much cheaper than buying meringue powder to make royal icing and works good!Cookie Cutter Size: I used a 3" and 4" cutters, and some Ninja kicking cutters, LOL! If you use only 2-3" cutters, you can get 36 cookies from the batch.
