Meatballs and Gravy is a classic comfort food recipe made with juicy homemade meatballs and rich beef gravy, all cooked in one skillet for an easy dinner.
Heat the oil in a large skillet over medium heat. Add the onion and cook for 4 to 5 minutes, stirring occasionally, until softened. Remove from the heat and let cool slightly.1 tablespoon oil,1 large onion.
In a small bowl, combine the oats and milk. Let stand for 2 to 3 minutes until the oats have softened.3/4 cup old-fashioned oats,1/2 cup milk.
In a large bowl, combine the ground beef, softened oat mixture, egg, cooked onion, Worcestershire sauce, salt, pepper, and thyme. Mix just until combined. Shape into 1 1/2-inch meatballs. 2 pounds ground beef,1 large egg,2 teaspoons Worcestershire sauce,1 1/2 teaspoons salt,1/2 teaspoon garlic powder,1/4 teaspoon black pepper,1/4 teaspoon dried thyme.
Wipe out the skillet if needed and return it to medium heat. Add the meatballs in a single layer, working in batches if necessary. Cook for 8 to 10 minutes, turning every few minutes, until browned on all sides. Transfer the meatballs to a plate.
Reduce the heat to medium-low. Carefully pour off the excess grease, leaving about 2 tablespoons of the drippings in the skillet.
Add the butter to the skillet. Once melted, whisk in the flour and cook for 1 minute, whisking constantly.4 tablespoons butter,4 tablespoons all-purpose flour.
Slowly whisk in the beef broth until smooth. Stir in the heavy cream, Worcestershire sauce, salt, and black pepper. Bring to a gentle simmer and cook for 3 to 5 minutes, stirring often, until the gravy has thickened.2 1/2 cups beef broth,1/2 cup heavy cream,1 tablespoon Worcestershire sauce,1 teaspoon salt,1/4 teaspoon black pepper.
Return the meatballs and any accumulated juices to the skillet. Spoon the gravy over the meatballs, cover, and simmer for 10 to 15 minutes, or until the meatballs are cooked through and reach 160°F. Serve over mashed potatoes, egg noodles, or rice.
Notes
Don't overmix the meatball mixture. Mix just until combined. Overmixing can make the meatballs dry and tough.
