Instructions
Preheat oven to 375°F. Line a 12-cup muffin pan with liners.

Add the dry ingredients to the wet ingredients and stir just until combined.
Let the batter rest for 10–15 minutes to allow the freshly milled flour to hydrate.

Divide the batter evenly between the 12 muffin cups. Sprinkle the cinnamon sugar evenly over the tops.
Bake for 18–22 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
Let the muffins cool in the pan for 5 minutes, then transfer to a cooling rack.
