Hot dog sauce is a smooth, fine-textured meat sauce made specifically as a hot dog topping. It’s thinner and slightly sweeter than regular chili, with no beans, and a texture fine enough that it stays on the hot dog rather than falling off. It goes by different names depending on where you are, coney sauce in Michigan, chili sauce or hot dog sauce in West Virginia and Kentucky, and hot dog chili sauce in other parts of the South.

This recipe is closest to the West Virginia and Kentucky style, which tends slightly sweeter than Michigan coney sauce and uses ketchup as a base rather than tomato sauce. If you grew up in that part of the country, this is the hot dog sauce you remember!

Ground beef (1 lb, 80/20): The fat adds flavor during the water cooking process and the excess drains off, so the sauce doesn’t end up greasy. Don’t use extra lean or the flavor suffers.

Water (1 cup): This is the technique that makes hot dog sauce different from regular chili. Cooking the beef in water first breaks it down into very fine pieces you can’t achieve by browning alone.

Ketchup (1/2 cup): The base of the sauce. It brings tomato flavor, sweetness, and that classic chili dog taste in one ingredient. Some recipes use plain tomato sauce instead but you lose both the sweetness and the depth that ketchup provides.

How to Make Hot Dog Sauce Step-by-Step:

The key to this homemade hot dog chili sauce is breaking the meat into very small pieces while it cooks so you get a finer texture instead of chunky chili.

STEP 1: Add ground beef and water to a large skillet (or large saucepan) over medium-high heat. Use a wooden spoon, meat chopper, or potato masher to break the meat into very small pieces as it cooks.

STEP 2: Continue cooking until the beef is fully cooked through and evenly broken down. Drain off excess grease if needed, leaving a small amount for flavor.

STEP 3: Stir in ketchup, chili powder, sugar, vinegar, mustard, tomato paste, onion powder, garlic powder, paprika, and salt.

STEP 4: Reduce heat to low heat and simmer uncovered for 20 to 25 minutes, stirring occasionally, until thickened into a flavorful sauce.

PRO TIP:

The texture is everything with this sauce. Use a meat chopper or the back of a wooden spoon to break the beef into the finest pieces possible while it cooks in the water. If you can still see recognizable ground beef chunks when you add the other ingredients, keep breaking it down. The finished sauce should look almost paste-like in texture, not chunky.

Storage and Reheating:

Storage: Store leftovers in the refrigerator in an airtight container. It can be kept in the refrigerator for up to 4 days.

Reheating:  Place the sauce in a skillet over medium heat, stirring occasionally, until heated through. You can also microwave it until hot. I like to add a little splash of water to loosen the meat, or beef broth. The sauce thickens considerably in the fridge. Don’t be alarmed when it looks almost solid cold, that’s normal. A splash of water or beef broth stirred in while reheating brings it right back to the right consistency.

Freezing: This sauce freezes well. Let it cool to room temperature, then store in a freezer-safe container for up to 2 months. Thaw before reheating.
