These are my husband’s most favorite cookies. I make them every Christmas time and everyone always loves them. The buttery texture with the pecans is just perfect, and rolling them in powdered sugar twice gives them that pretty snowy look.

The key is rolling them in powdered sugar while they are still warm for the first coat, then again once they cool. Step 2: In large bowl, beat butter and 1/2 cup powdered sugar on medium speed with a hand mixer, or stand mixer with paddle attachment, until light and fluffy, about 3 minutes. You can also use a hand mixer.
Step 3: Add vanilla extract and beat until combined.
Step 4: In medium bowl, whisk together flour and salt.
Step 5: Gradually mix dry ingredients into wet ingredients until just combined.
Step 6: Stir in chopped nuts.
Step 7: Roll dough into 1-inch cookie dough balls (use a small cookie scoop for even sizes) and place on prepared baking sheets in a single layer about 2 inches apart.
Step 8: Bake 12-14 minutes until bottoms are lightly golden but tops remain pale for best results.
Step 9: Let cool on baking sheet 5 minutes.
Step 10: While still warm, roll baked cookies in powdered sugar from a shallow bowl. Let cool completely on wire racks or cooling rack.
