Peel apples and sit aside. Melt 2 tablespoons butter in a small skillet over medium heat. Add the diced apples, maple syrup, cinnamon, and nutmeg. Cook for 3–5 minutes, stirring occasionally, until the apples begin to soften. 2 Tbsp butter,126 g apple (about 1 cup),66 g pure maple syrup (3 Tbsp),3 g ground cinnamon (1 tsp),0.25 g ground nutmeg (1/8 tsp).
In a medium sized saucepan, add the milk and salt. Heat until the milk is steaming and just beginning to simmer. 546 g whole milk (2 cups+ 2 Tbsp),2 g salt (1/4 tsp).
Slowly whisk in the coarsely milled einkorn. Reduce the heat to low and cook for 4–6 minutes, whisking frequently, until thick and creamy.88 g freshly milled einkorn wheat (1/2 cup).
Remove from the heat and stir in the vanilla and remaining 2 tablespoons butter. 4 g vanilla extract (1 tsp),2 Tbsp butter
Stir 2/3 of the cooked apple mixture into the cream of wheat then divide between the bowls and spoon the rest of the apple mixture over the top.

Use any apples you love. I used Gala in the recipe, but have use granny smith also. Just adjust the sweetness level.
