This homemade cream of wheat is so yummy! It’s naturally sweetened with pure maple syrup, and ready in about 15 minutes. The freshly milled einkorn makes it a filling whole grain breakfast, while the cooked apples add plenty of sweetness and cinnamon flavor.

I love that it feels like a special fall breakfast without taking much longer than making a regular bowl of hot cereal! This is one breakfast you’ll want to make all fall.

Recipe Ingredients:

You’ll need the following ingredients to make this Apple Cinnamon Cream of Wheat with Fresh Milled Flour:

  • Freshly Milled Einkorn
  • Apples- I used Gala for this recipe, but any apple will work.
  • Butter
  • Pure Maple Syrup
  • Ground cinnamon
  • Ground nutmeg
  • Whole milk
  • Salt
  • Vanilla extract

Ingredient Notes:

  • Apples: Peel and dice the apple into small pieces so it softens quickly. You can use your favorite baking apple or whatever you already have on hand.
  • Maple Syrup: Pure maple syrup sweetens the apples and the cream of wheat without using granulated sugar.
  • Whole Milk: Whole milk makes the cream of wheat rich and creamy. Additional milk can be stirred in if you prefer a thinner consistency.
  • Freshly Milled Flour: Mill the Einkorn on a coarse setting. I set my WonderMill about halfway between the Bread and Coarse settings, at about the 2 o’clock position (as shows in the image below). This gives the cereal just the right amount of texture while still cooking up smooth and creamy.

How to Make Apple Cinnamon Cream of Wheat with Fresh Milled Flour

Step 1: Melt 2 tablespoons of butter in a small skillet over medium heat. Add the diced apples, maple syrup, cinnamon, and nutmeg.

Step 2: Cook the apples for 3–5 minutes, stirring occasionally, until they begin to soften.

Step 3: Add the milk and salt to a medium-sized saucepan. Heat until the milk is steaming and just beginning to simmer.

Step 4: Slowly whisk in the coarsely milled einkorn. Reduce the heat to low and cook for 4–6 minutes, whisking frequently, until thick and creamy.

Step 5: Remove the saucepan from the heat and stir in the vanilla and remaining 2 tablespoons of butter.

Step 6: Stir about 2/3 of the cooked apple mixture into the cream of wheat.

Step 7: Divide the cream of wheat between the bowls and spoon the remaining apple mixture over the top.

NOTE: I usually recommend letting freshly milled flour cool before using it because warm flour can affect some recipes. For this recipe, you can use it straight from the mill since it’s going directly into hot milk.

PRO TIP:

Slowly whisk the coarsely milled Einkorn into the hot milk. Adding it gradually while whisking helps prevent lumps and gives the cereal a smoother texture.

Storage and Reheating:

Storage: Store leftover cream of wheat in an airtight container in the refrigerator for up to 3 days.

Reheating: Reheat it in a saucepan over low heat or in the microwave. Stir in additional milk as needed because the Einkorn will continue to thicken as it sits.

Freezing: I don’t recommend freezing cream of wheat because the texture may change after thawing.

Additions and Substitutions:

Apples: Use any apple you enjoy. Firmer apples will hold their shape better, while softer varieties will cook down more quickly.

Nuts: Add chopped pecans or walnuts over the top for a little crunch.

Milk: Another type of milk can be used, but it may not make the cream of wheat quite as rich and creamy as whole milk.

Sweetness: Add an extra drizzle of maple syrup to individual bowls if you prefer a sweeter breakfast.

FAQs About Apple Cinnamon Cream of Wheat

Why is my cream of wheat too thick?

Freshly Milled Einkorn continues absorbing liquid as it sits, so it can become thick quickly. Stir in a little additional milk until it reaches the consistency you like.

Why is my cream of wheat lumpy?

The einkorn may have been added too quickly. Slowly sprinkle it into the hot milk while whisking continuously to help prevent lumps.

Can I use another wheat berry?

Yes! Spelt would be my first choice in place of einkorn because I already love that in my regular and pumpkin cream of wheat. The flavor and cooking time may vary slightly depending on the grain you use.

What Can I Serve with Apple Cream of Wheat?

This cream of wheat makes an easy breakfast on its own. For a larger breakfast, serve it with eggs, bacon, sausage, or fresh fruit.

  • 88 g freshly milled einkorn wheat (1/2 cup) coarsely milled
  • 126 g apple (about 1 cup) peeled and diced
  • 4 Tbsp butter, divided
  • 66 g pure maple syrup (3 Tbsp)
  • 3 g ground cinnamon (1 tsp)
  • 0.25 g ground nutmeg (1/8 tsp)
  • 546 g whole milk (2 cups+ 2 Tbsp)
  • 2 g salt (1/4 tsp)
  • 4 g vanilla extract (1 tsp)

Instructions

Notes

Use any apples you love. I used Gala in the recipe, but have use granny smith also. Just adjust the sweetness level.
