These Chicken Bites are tender, juicy bite-sized pieces of seasoned chicken that cook up fast in one pan! They're perfect for busy nights when you want something delicious without a lot of work, plus they're one of the best healthy options compared to fried chicken bites.
Cut chicken into 1-inch bite-sized pieces. Pat dry with paper towels.
In large bowl, toss chicken pieces with olive oil, garlic powder, onion powder, paprika, salt, pepper and oregano until evenly coated.
Heat large skillet over medium-high heat. Add seasoned chicken pieces in single layer.
Cook 6 to 8 minutes, stirring occasionally, until chicken is golden and cooked through (165°F internal temperature). Remove from skillet and set aside.
Add butter and minced garlic to skillet. Cook 1 minute until fragrant.
Add chicken broth and lemon juice. Cook 1 to 2 minutes until liquid reduces slightly.
Add the cooked chicken pieces back into the skillet and toss to coat in the sauce.
Remove from heat and serve immediately.
Notes
Pro Tip: Cook the chicken in a single layer without overcrowding the pan! You may need to cook in batches with smaller skillets. Overcrowding will cause the chicken to steam instead of cooking properly.
