You’ll need the following ingredients to make these boneless chicken bites:
- Boneless, skinless chicken breasts cut into bite sized pieces
- Avocado oil
- Garlic powder
- Onion powder
- Paprika
- Salt

- Dried oregano
- Butter
- Garlic
- Lemon juice
- Chicken broth
Ingredient Notes:
- Chicken: Make sure to cut them into 1-inch pieces so they cook evenly. You could also use skinless chicken thighs for even more flavor.
- Oil: You only need a little oil for this recipe. Olive oil works perfectly, or you can use whatever cooking oil you have on hand.
- Seasoning: This blend gives great flavor, but you can experiment with different spices or italian seasoning for variety.
- Garlic: Fresh garlic gives the best flavor, and make sure your butter is at room temperature for easier mixing.
How to make chicken bites step-by-step:

STEP 1: Pat the chicken cubes dry with paper towels.
STEP 2: In mixing bowl, toss chicken pieces with oil, garlic powder, onion powder, paprika, salt, pepper and oregano until evenly coated.
STEP 3: Heat large skillet or cast iron skillet over med-high heat until you have a hot pan.
STEP 4: Add seasoned chicken pieces in an even layer. Cook until chicken is golden and cooked through to 165°F. Use an instant-read thermometer to check each piece of chicken. Remove from skillet and set aside.
STEP 5: Add unsalted butter and minced garlic to the same pan. Cook 1 minute until fragrant.
STEP 6: Add chicken broth and lemon juice. Cook a couple minutes until liquid reduces slightly.
STEP 7: Add the cooked chicken pieces back into the skillet and toss to coat in the sauce.
STEP 8: Remove from heat and serve immediately, garnished with fresh parsley if desired.
PRO TIP:
Cook the chicken in a single layer without overcrowding the pan! You may need to cook in batches with smaller skillets. Overcrowding will cause the chicken to steam instead of cooking properly. This is one of my little tips for perfect results every time!

Reheating: Leftover chicken bites can be reheated in a skillet over medium heat for a couple minutes, or microwave for 30-60 seconds until warmed through.
Freezing: These freeze well for up to 3 months. Make a double batch and freeze half for later! Thaw overnight in the refrigerator before reheating.
