This great recipe has become one of my go-to meals for meal prep, quick dinners, or even as a party snack.

You’ll need the following ingredients to make these boneless chicken bites:

  • Boneless, skinless chicken breasts cut into bite sized pieces
  • Avocado oil
  • Garlic powder
  • Onion powder
  • Paprika
  • Salt
  • Black pepper
  • Dried oregano
  • Butter
  • Garlic
  • Lemon juice
  • Chicken broth

Ingredient Notes:

  • Chicken: Make sure to cut them into 1-inch pieces so they cook evenly. You could also use skinless chicken thighs for even more flavor.
  • Oil: You only need a little oil for this recipe. Olive oil works perfectly, or you can use whatever cooking oil you have on hand.
  • Seasoning: This blend gives great flavor, but you can experiment with different spices or italian seasoning for variety.
  • Garlic: Fresh garlic gives the best flavor, and make sure your butter is at room temperature for easier mixing.

How to make chicken bites step-by-step:

STEP 1: Pat the chicken cubes dry with paper towels. 

STEP 2: In mixing bowl, toss chicken pieces with oil, garlic powder, onion powder, paprika, salt, pepper and oregano until evenly coated.

STEP 3: Heat large skillet or cast iron skillet over med-high heat until you have a hot pan. 

STEP 4: Add seasoned chicken pieces in an even layer. Cook until chicken is golden and cooked through to 165°F. Use an instant-read thermometer to check each piece of chicken. Remove from skillet and set aside.

STEP 5: Add unsalted butter and minced garlic to the same pan. Cook 1 minute until fragrant.

STEP 6: Add chicken broth and lemon juice. Cook a couple minutes until liquid reduces slightly.

STEP 7: Add the cooked chicken pieces back into the skillet and toss to coat in the sauce.

STEP 8: Remove from heat and serve immediately, garnished with fresh parsley if desired.

PRO TIP:

Cook the chicken in a single layer without overcrowding the pan! You may need to cook in batches with smaller skillets. Overcrowding will cause the chicken to steam instead of cooking properly. This is one of my little tips for perfect results every time!

Storage and Reheating:

Storage: Store cooked chicken bites in the refrigerator for up to 3-4 days in an airtight container.

Reheating: Leftover chicken bites can be reheated in a skillet over medium heat for a couple minutes, or microwave for 30-60 seconds until warmed through. 

Freezing: These freeze well for up to 3 months. Make a double batch and freeze half for later! Thaw overnight in the refrigerator before reheating.

  • Heat: Add red pepper flakes or cayenne pepper for a spicy kick.
  • Sauces: Try soy sauce, dijon mustard, or make a cream sauce for dipping.

SUBSTITUTIONS:

  • Cooking Methods: These work great as oven-baked chicken bites on a baking sheet at 425°F for 15-20 minutes, or make them in an air fryer for extra crispiness.
  • Different Flavors: Try garlic butter chicken bites, greek chicken bites with herbs, blackened chicken bites with cajun spices, or ranch chicken bites with ranch seasoning.
  • Oil: You can use avocado oil or vegetable oil instead of olive oil for coating the chicken. No hot oil required for this recipe since no frying is involved.

How do I know when the chicken is done? 

The internal temperature should reach 165 degrees F, and the chicken should be nicely browned on the outside with no pink inside.

What if my chicken is sticking to the pan?

 Make sure your pan is hot before adding the chicken, and resist the urge to add more oil because it will make the chicken super wet and soggy. Don’t move the pieces too early; let them get a good sear first before stirring.
