Applesauce Muffins are the perfect way to use up that jar of homemade applesauce or store-bought applesauce in your fridge. This applesauce muffin recipe creates soft, moist healthy muffins with just the right amount of cinnamon spice.
Preheat oven to 375°F. Line 12-cup muffin pan with paper liners.
Make the topping: In small bowl, mix 2 tablespoons sugar and 1/2 teaspoon cinnamon. Set aside. 2 tablespoons granulated sugar,1/2 teaspoon ground cinnamon.
In large bowl, whisk together flour, 3/4 cup sugar, baking powder, salt, cinnamon and nutmeg. 2 cups all-purpose flour,3/4 cup granulated sugar,2 teaspoons baking powder,1/2 teaspoon salt,1 teaspoon ground cinnamon,1/4 teaspoon ground nutmeg.
In medium bowl, whisk together applesauce, milk, oil, egg and vanilla until well combined.1 cup unsweetened applesauce,1/2 cup milk,1/3 cup vegetable oil,1 large egg,1 teaspoon vanilla extract.
Add wet ingredients to dry ingredients and stir just until combined. Don't over mix; batter should be slightly lumpy.
Divide batter evenly among muffin cups, filling each about 3/4 full.
Sprinkle cinnamon sugar topping evenly over muffins.
Bake 18 to 20 minutes or until toothpick inserted in center comes out clean.
Cool in pan 5 minutes, then transfer to wire rack to cool completely.
