Easy Cherry Crisp
is everything a fruit desserts should be! The combination of sweet cherry filling and crunchy oatmeal topping is absolutely irresistible. I love using canned cherries because it cuts out all the prep work.

Oatmeal Streusel Topping:

cup
all-purpose flour
1
cup
old-fashioned rolled oats
3/4
cup
packed light brown sugar
1/2
teaspoon
baking powder
1/2
teaspoon
ground cinnamon
1/2
teaspoon
salt
1/2
cup
unsalted butter
cold and cubed
Instructions
Preheat the oven to 375°F. Grease a 9-inch pie dish or a 2-quart baking dish.
In a large bowl, combine the cherry pie filling, and vanilla extract. Stir and pour into the prepared baking dish, spreading it out evenly.
In another bowl, whisk together the all-purpose flour, rolled oats, light brown sugar, baking powder, ground cinnamon, and salt.
Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.
Sprinkle the oatmeal streusel topping evenly over the cherry filling.
Bake for 35-40 minutes, or until the topping is golden brown and the cherry filling is bubbling around the edges.
Remove from the oven and let cool for 5-10 minutes before serving.
Serve warm, topped with vanilla ice cream or a dollop of whipped cream, if desired.
Notes
Note: you can also bake this in a 2-quart baking dish, or even a 9X13 inch baking dish. It will just be a thinner layer of filling and topping.
