227gfreshly milled soft white wheat flour (2 cups)
8gbaking powder (2 tsp)
3gbaking soda (1/2 tsp)
3gsalt (1/2 tsp)
2largeeggs
1 1/4cupsbuttermilk
1/4cuppure maple syrup
3Tbspbutter, melted and slightly cooled
1teaspoonvanilla extract
Instructions
Whisk the freshly milled soft white wheat flour, baking powder, baking soda, and salt together in a large bowl.227 g freshly milled soft white wheat flour (2 cups),8 g baking powder (2 tsp),3 g baking soda (1/2 tsp),3 g salt (1/2 tsp).
In a separate bowl, whisk the eggs, buttermilk, maple syrup, melted butter, and vanilla until combined.2 large eggs,1 1/4 cups buttermilk,1/4 cup pure maple syrup,3 Tbsp butter, melted and slightly cooled,1 teaspoon vanilla extract.
Pour the wet ingredients into the dry ingredients and gently stir just until combined. The batter should be thick. Avoid overmixing.
Let the pancake batter rest for 10 minutes to give the freshly milled flour time to absorb the liquid. After resting, gently stir the batter a couple times to make the consistency even again.
Preheat a griddle over medium-low heat and lightly grease it with butter or oil.
Scoop about 1/4 cup of batter onto the hot griddle for each pancake. (I also love to use a large cookie scoop! )Gently shape into a round if needed, but avoid spreading the batter too thin.
Cook for about 2 to 3 minutes, until bubbles begin to open across the surface and the edges look set.
Flip and cook for another 1 to 2 minutes, or until golden brown and cooked through.
Serve warm with butter and pure maple syrup.
Notes
Make sure your baking powder and baking soda are fresh and active for best results.
