Smoked Sausage and Potatoes is a quick 30-minute one-pan skillet meal with crispy potatoes, peppers, and onions. Easy weeknight dinner the whole family loves!
Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat.
Add sliced sausage and cook for 4-5 minutes until lightly browned. Remove from skillet and set aside.
Add the remaining 2 tablespoons of avocado oil to the skillet.
Add potato cubes to the hot oil. Cook for 5-7 minutes, stirring occasionally, until potatoes start to brown.
Add onion and bell pepper. Continue cooking for another 5-7 minutes, stirring occasionally.
Add minced garlic, paprika, salt, pepper, and thyme. Stir to combine.
Return the sausage to the skillet and mix with the potatoes and vegetables.
Reduce heat to medium-low. Cook for another 5-7 minutes, stirring occasionally, until potatoes are tender and crispy on the outside.
Sprinkle the chopped fresh rosemary over the dish just before serving and stir gently to incorporate. This will release its aroma without the need for additional cooking time.
Garnish with fresh parsley, if desired.
