The original recipe I created called for sausage, potatoes, and fresh green beans, but this variation was liked best by my family. It’s a great choice, using minimal ingredients with a quick cook time, perfect for easy weeknight meals featuring delicious smoked sausage!

If you threw everything in at once, the potatoes would be undercooked and the peppers would be mush. You’ll need the following ingredients to make this Potato Sausage Skillet:

  • Smoked sausage
  • Red potatoes- I used baby potatoes to make it easier to chop.
  • Yellow onion
  • Red bell pepper (you can also use green peppers)
  • Garlic cloves- You can use garlic powder instead.
  • Olive oil
  • Dried thyme
  • Paprika
  • Salt
  • Black pepper
  • Fresh rosemary

INGREDIENT NOTES:

  • Smoked Sausage: Adds a rich, smoky flavor to the dish. You can use turkey sausage, chicken sausage, or beef sausage as alternatives.
  • Potatoes: Red potatoes are great for this recipe, but you can also use russet potatoes, sweet potatoes, or gold potatoes.
  • Fresh Rosemary: I love using fresh rosemary anytime I can, but you can also make this with 1 1/2 teaspoons dried rosemary.

How to make smoked sausage and potato step-by-step:

STEP 1: Heat oil in a large skillet over medium-high heat.

STEP 2: Add sliced sausage slices and cook until lightly browned. Remove from skillet and set aside.

STEP 3: Add more oil to the skillet.

STEP 4: Add red potato cubes to the hot oil. Cook, stirring occasionally, until potatoes start to brown.

STEP 5: Add sliced yellow onion and red bell pepper. Continue cooking, stirring occasionally.

STEP 7: Return the sausage to the skillet and mix with the potatoes and vegetables.

STEP 8: Reduce heat to medium-low. Cook, stirring occasionally, until potatoes are tender and crispy on the outside.

STEP 9: Sprinkle the chopped fresh rosemary over the dish just before serving and stir gently to incorporate.

  • 1 pound smoked sausage sliced into 1/4-inch rounds
  • 2 pounds red potatoes cut into 1-inch cubes
  • 1 large onion sliced
  • 1 red bell pepper thinly sliced
  • 2 cloves garlic minced
  • 1/4 cup avocado oil divided
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh rosemary chopped (use 1 1/2 dried rosemary instead)
  • Chopped fresh parsley for garnish, optional

Instructions
 

  • Heat 2 tablespoons of avocado oil in a large skillet over medium-high heat.

  • Add the remaining 2 tablespoons of avocado oil to the skillet.
  • Add potato cubes to the hot oil. Cook for 5-7 minutes, stirring occasionally, until potatoes start to brown.
  • Add onion and bell pepper. Continue cooking for another 5-7 minutes, stirring occasionally.
  • Add minced garlic, paprika, salt, pepper, and thyme. Stir to combine.
  • Return the sausage to the skillet and mix with the potatoes and vegetables.
  • Reduce heat to medium-low. Cook for another 5-7 minutes, stirring occasionally, until potatoes are tender and crispy on the outside.
  • Sprinkle the chopped fresh rosemary over the dish just before serving and stir gently to incorporate. This will release its aroma without the need for additional cooking time.
  • Garnish with fresh parsley, if desired.
