Instructions
Heat oil in a large cast iron skillet over medium-high heat. Add the diced sweet potatoes and cook for 5 minutes, stirring occasionally.
Push the sweet potatoes to one side of the skillet and add the breakfast sausage. Break it up with a spatula as it cooks.
When the sausage is nearly cooked through, stir in the bell pepper. Season with onion powder, garlic powder, paprika, salt, and pepper.
Continue cooking, stirring occasionally, until the sweet potatoes are tender and the bell pepper has softened, about 10-12 minutes.
Using the back of a spoon, create 3 wells in the hash. Crack an egg into each well.
Cover the skillet and cook until the egg whites are set and the yolks reach your desired doneness, about 5-7 minutes for runny yolks.
Sprinkle with additional salt and pepper on the eggs and fresh parsley, if desired. Serve hot.
