You’ll need the following ingredients to make this amazing Sweet Potato Recipe:

  • Large Sweet potato
  • Red bell pepper
  • Breakfast sausage- I used Bob Evans® Original Pork Sausage Roll, but any sausage will work!
  • Eggs
  • Avocado oil or Olive oil
  • Onion powder- A red onion is also great in this recipe. 
  • Garlic powder- You can also use fresh garlic. 
  • Paprika
  • Salt
  • Black pepper

HOW TO MAKE SWEET POTATO BREAKFAST HASH:

Step 1: Heat the oil in a large cast iron skillet over medium-high heat. Add the diced sweet potatoes and cook for 5 minutes, stirring occasionally.

Step 2: Push the sweet potatoes to one side of the skillet. Add the breakfast sausage to the empty space, breaking it up with a spatula as it cooks.

Step 3: When the sausage is nearly cooked through, stir in the diced red bell pepper. Sprinkle with onion powder, garlic powder, paprika, salt, and black pepper.

Step 4: Continue cooking, stirring occasionally, until the sweet potatoes are tender and the bell pepper has softened, about 10-12 minutes.

A six-step cooking process in a skillet: 1) Diced sweet potatoes. 2) Adding ground meat. 3) Mixing in chopped red peppers. 4) Stirred mixture. 5) Making wells with a spoon. 6) Eggs placed in wells in the mixture.
