What is a Loose Meat Sandwich?
A loose meat sandwich is seasoned ground beef cooked in a skillet and served on a bun. No patty, no sauce, just well-seasoned beef with a little broth simmered in. It’s sometimes called a Maid-Rite sandwich after the Iowa restaurant chain that made it famous, or a ground beef sandwich depending on where you’re from.
The difference between a loose meat sandwich and a Sloppy Joe is the sauce. Sloppy Joes have a tomato-based sauce. Loose meat sandwiches don’t. The beef stays loose and juicy from the broth and seasoning but it’s not saucy or messy. It’s a completely different texture and flavor.
The original Maid-Rite loose meat sandwich comes from Iowa, particularly cities like Sioux City and Cedar Rapids, where these have been a staple at small diners for decades. This is a homemade version that comes close.
What you’ll love about these Loose Meat Sandwiches:
Ingredients
Ground beef (1 lb): Use 80/20 for the best flavor. Lean beef works but the meat comes out a little drier. Drain the grease well after browning.
Onion (1 medium, finely chopped): Goes in with the beef. Dice it small so it cooks down and blends into the meat rather than sitting in chunks.
Garlic (3 cloves, minced): Goes in after the beef is browned so it doesn’t burn.
Worcestershire sauce (2 tsp) and yellow mustard (2 tsp): These two together are what give this its flavor. Don’t skip either one. Dijon or spicy brown mustard can replace the yellow for a different flavor.
Apple cider vinegar (2 tsp): Adds a subtle tang that balances the richness of the beef.
Beef broth (⅓ cup): Simmered in until mostly evaporated. This is what keeps the meat juicy instead of dry. Chicken or vegetable broth can substitute.
Paprika, salt, black pepper: Simple seasoning. Nothing unusual.
Hamburger buns (4): Soft buns are traditional. Any soft roll works.

How to Make a Loose Meat Sandwich
Step 1: In a large skillet over medium-high heat cook the ground beef and onion until the beef is no longer pink, about 6 to 8 minutes. Drain the excess grease.
Step 2: Add the minced garlic. Cook 30 to 45 seconds until fragrant.
Step 3: Stir in the Worcestershire sauce, mustard, apple cider vinegar, paprika, salt, and pepper. Cook 2 minutes.
Step 4: Pour in the beef broth and simmer, stirring occasionally, until most of the liquid has evaporated — about 5 to 7 minutes.
Step 5: Taste and adjust seasoning. Serve on hamburger buns with your favorite toppings.

Pro Tip:
Don’t rush the simmer. Let the broth cook down until it’s almost gone. That’s what concentrates the flavor and keeps the meat juicy without making it soggy on the bun.

How Long Does This Keep?
Storage: Store the meat mixture in an airtight container for up to 3 days. Keep it separate from the buns.
Reheating: Reheat in a skillet over medium heat with a splash of broth or water to loosen. Microwave works too, 1 to 2 minutes until hot.
Freezing: Freeze the meat mixture in a freezer-safe container for up to 3 months. Thaw overnight in the fridge before reheating.
Can I Change Up the Ingredients?
Dill pickles are the most traditional topping. A reader from Cedar Rapids confirmed this is how Maid-Rite serves them. Pickle juice splashed into the meat while it simmers adds extra tang if you want to go that route.
Cheese on top is popular with my family, cheddar, Monterey Jack, or provolone all work. One reader used provolone and said it was their favorite version.
For heat add diced jalapeños with the onion, a splash of hot sauce, or a pinch of cayenne with the seasonings.
Bell peppers, mushrooms, or carrots can all go in with the onion if you want to stretch the meat further or add vegetables.
Ground turkey or chicken can replace the beef for a lighter version. Traditional Maid-Rite is always beef but both alternatives work with the same seasoning. Soy sauce can replace Worcestershire if needed.
Questions about this Maid-Rite Recipe:
Can I Make This in a Slow Cooker?
Yes. Brown the beef and onion first and drain the grease, don’t skip that step. Transfer to the slow cooker with all remaining ingredients and cook on low for 4 to 6 hours. The broth won’t evaporate the same way so the mixture will be slightly looser than the skillet version and that’s fine.
What is the difference between a loose meat sandwich and a Sloppy Joe?
Sloppy Joes have a tomato-based sauce. Loose meat sandwiches don’t. The beef is seasoned and simmered in broth until the liquid is mostly absorbed. The result is juicy but not saucy, and it holds on a bun without falling apart the same way.
What is a Maid-Rite sandwich?
Maid-Rite is an Iowa restaurant chain famous for its loose meat sandwiches. The original has been served since 1926 and is considered the defining version of the dish. This recipe is a homemade version inspired by that style.
Is this the same as an Iowa loose meat sandwich?
Yes. Iowa loose meat sandwich, Maid-Rite sandwich, and loose meat sandwich all refer to the same style of dish. The name just depends on where you’re from.
What type of bun works best?
Soft hamburger buns are traditional. Any soft roll works, hot dog buns included. Avoid crusty bread which makes the sandwich hard to eat.
Can I use a different meat?
Yes. Ground turkey, chicken, or pork all work. Traditional Maid-Rite is always ground beef but the seasoning works with any ground meat.

What Goes Well With This Maid-Rite Sandwich?
Serve with french fries or potato chips like you’d get at a diner. Southern coleslaw or Southern potato salad both work great on the side.
