Who doesn’t love pizza in a fun, handheld form? These mini pizzas are basically a pepperoni pizza in muffin cups. Someone asked if I saw the Pizza Cupcakes Shark Tank episode and did these? I can honestly say, no! My kids love pizza and muffins, so I’m always looking for easy kid snacks.
My twins like to call them “cupcakes” because they’re baked in a muffin pan and look like a little treat. I mean who can resist that gooey cheese in the middle? Plus, I already have a pizza muffins recipe made with freshly milled wheat. So that’s why they’re called pizza cupcakes!

You’ll need the following ingredients to make this amazing Pizza Cupcake Recipe:
- All-purpose flour
- Baking powder
- Dried oregano
- Garlic powder
- Salt
- Black pepper
- Eggs
- Whole Milk
- Olive oil- I’ve used avocado oil, and vegetable oil. Use whatever you have!
- Pizza sauce
- Mini pepperoni- I love to use the little mini pepperonis, but I’ve also used whole slices before and just chopped them up.
- Shredded mozzarella cheese
- Grated parmesan cheese
- mozzarella cheese cubes

INGREDIENT NOTES:
- Mini pepperoni: These small pepperoni slices are perfect for getting a little taste of pepperoni with each bite, plus they’re just so adorable to look at!
- Mozzarella cubes: Adding a cube of mozzarella in the center gives each cupcake a gooey cheese center!
- Pizza sauce: Use your favorite store-bought pizza sauce or make your own for extra flavor.
HOW TO MAKE PIZZA CUPCAKES STEP-BY-STEP:

STEP 1: Preheat the oven to 375°F and grease a 12-count muffin pan with cooking spray. You can also use cupcake liners for easier clean up.
STEP 2: In a large bowl, whisk together the flour, baking powder, oregano, garlic powder, salt, and pepper.
STEP 3: In another bowl, beat the eggs, milk, olive oil, and pizza sauce until well combined.
STEP 4: Pour the wet ingredients into the dry ingredients and stir until just combined.
STEP 5: Fold in shredded mozzarella, Parmesan cheese, and mini pepperoni.
STEP 6: Fill each muffin cup with batter. Place a cube of mozzarella in the center of each.

STEP 7: Top with the remaining batter, ensuring the cheese cube is covered. Sprinkle the remaining shredded mozzarella and mini pepperoni on top.
STEP 8: Bake for 15-18 minutes, or until the edges are golden and the cheese is melted and bubbly.
STEP 9: Let cool in the pan for 5 minutes before carefully removing the cupcakes. Serve warm with extra pizza sauce for dipping.

- 1 cup mini pepperoni divided
- 2 cups shredded mozzarella cheese divided
- 1/2 cup grated Parmesan cheese
- 12 small cubes mozzarella cheese about 1/2 inch
