Recipe Ingredients
You’ll need the following ingredients to make this amazing Doritos Chicken Casserole:
- Boneless skinless chicken breasts
- Avocado oil
- Bag of Doritos, crushed
- Cream of chicken soup
- Sour cream
- Milk
- Can of Rotel tomatoes with green chiles
- Colby Jack cheese or cheddar cheese
- Taco seasoning

HOW TO MAKE DORITOS CASSEROLE STEP-BY-STEP:

Step1: Preheat oven to 350°F. Grease a casserole dish with cooking spray.
Step 2: Heat avocado oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper.
Step 3: Add chicken to the hot skillet and cook until golden brown and no longer pink, about 5-7 minutes. Set aside.
Step 4: In a large mixing bowl, combine the cooked chicken, cream of chicken soup, milk, sour cream, drained can of Rotel tomatoes with green chiles, and taco seasoning. Mix well.
Step 5: Spread 2 cups of crushed Dorito chips across the bottom of the baking dish, then top with half of the chicken mixture.
Step 6: Add another layer of Doritos, then the remaining chicken mixture.
Step 7: Sprinkle the remaining Colby Jack cheese evenly on top.
Step 8: Cover with aluminum foil and bake for 25 minutes. Remove the foil and bake for another 5-10 minutes until bubbly, with a crunchy texture and melted cheese.
Step 9: Let stand for 5 minutes before serving.

- 2 large chicken breasts cut into 1/2-inch cubes

- 1 tablespoon avocado oil
- 1 bag (9.75 ounces ) Nacho Cheese Doritos, crushed, (about 3 cups total)
- 1 can (10.5 ounces) cream of chicken soup
- 1/2 cup milk
- 1/2 cup sour cream
- 1 can (10 ounces) Rotel diced tomatoes with green chilies, drained
- 1/2 packet (1 ounce) taco seasoning (about 1 1/2 tablespoons)
- 2 cups shredded Colby Jack cheese
Instructions
- Preheat oven to 350°F. Grease a 2-quart baking dish.
- Heat avocado oil in a large skillet over medium-high heat. Season chicken with salt and pepper. 1 tablespoon avocado oil, 2 large chicken breasts, salt & pepper, to taste.
- Add chicken to the hot skillet and cook until golden brown and no longer pink, about 5-7 minutes. Set aside.
- In a large bowl, combine the cooked chicken, cream of chicken soup, milk, sour cream, drained Rotel tomatoes, and taco seasoning.
