Step 1: Season the chicken with Italian seasoning, salt, and black pepper.
Step 2: In a large skillet over medium-high heat, melt the butter and cook the chicken until golden brown on both sides, about 6-8 minutes per side. Use an instant-read thermometer to ensure the chicken reaches 165°F internally. Remove the chicken and let it rest for 5 minutes before slicing into strips.
Step 3: Meanwhile, bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente.
Step 4: In the same skillet, add the garlic and cook for 30 seconds, stirring constantly to prevent burning.
Step 5: Lower the heat to medium-low and pour in the heavy whipping cream, cream cheese, and chicken broth, scraping up the browned bits from the bottom of the pan as you stir.
Step 6: Simmer the sauce for 5 minutes, then stir in 1 cup of Parmesan cheese. Cook for another 3-4 minutes until the sauce thickens into a creamy consistency. Adjust seasoning with onion powder or garlic powder if needed.
Step 7: Toss the cooked linguine with the sauce until well-coated. Add additional heavy cream or milk, a little at a time, to loosen the sauce if needed.
Step 8: Plate the linguine and top with the sliced chicken. Garnish with fresh parsley and additional Parmesan cheese before serving.
PRO TIP:
To prevent the cream from curdling, keep the heat at medium-low and avoid boiling the sauce. Stir continuously while adding the cream and cheese for a smooth, creamy finish.
