With a buttery crumble topping, sweet cinnamon sugar layer, these moist coffee cake muffins are perfect for breakfast, brunch, or an afternoon snack with a cup of coffee. Or just eating 2 or 3 when no one is looking! LOL!

I love making this recipe. They really are the best coffee cake muffins! They give you all that delicious coffee cake flavor without having to make a whole cake. The streusel topping gets nice and crunchy, and there’s even a layer of it baked into the center of the muffin! They’re so much easier than traditional coffee cake but just as tasty.

These muffins are great for busy mornings because you can make them ahead and grab one on your way out the door. The sour cream keeps them super moist, and the cinnamon sugar mixture is absolutely irresistible! This is a delicious muffin recipe you’ll fall in love with! It’s one of my personal favorites! Sorry to use all the exclamation marks, but this is seriously one of the best coffee cake recipes you’ll ever eat, even if it is in muffin form, LOL!

You’ll need the following ingredients to make this this easy quick muffins recipe:

  • For the Streusel Topping:
  • All-purpose flour
  • Packed light brown sugar
  • Ground cinnamon
  • Unsalted butter
  • For the Muffins:
  • All-purpose flour
  • Granulated sugar
  • Baking powder
  • Baking soda
  • Salt
  • Ground cinnamon
  • Large eggs
  • Sour cream
  • Unsalted butter
  • Vanilla extract
All-purpose flour, sour cream, brown sugar, butter, white sugar, eggs, vanilla, cinnamon, baking powder, baking soda.

Ingredient Notes:

  • Sour Cream: This is what makes the muffins so moist and tender. Don’t skip it! 
  • Butter: Use unsalted butter so you can control the salt level. Make sure to melt it and let it cool slightly. 
  • Brown Sugar: Light brown sugar works best for the streusel, though dark brown sugar will give a deeper molasses flavor based on personal preference.

How to Make Coffee Cake Muffins Recipe Step-by-Step:

Step 1: Heat oven to 375°F. Line a 12-cup muffin tin with muffin liners or grease well to make a prepared muffin tin.

Step 2: Make streusel topping by combining flour, brown sugar, and cinnamon in a separate bowl. Add melted butter and stir with fork until crumbly. This butter mixture should be crumbly. Set aside and make sure you have enough streusel for both layers.

Step 3: In large mixing bowl (or use a stand mixer), whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

Step 4: In medium bowl, whisk together eggs, sour cream, melted butter, and vanilla until smooth.

Step 5: Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix the muffin batter.

Step 6: Divide half the batter evenly among muffin cups in the muffin pan. Sprinkle half the streusel topping over batter in each cup.

Step 7: Add the rest of the batter over the streusel layer, then sprinkle remaining streusel topping over the top of the muffin for each one.

Step 8: Bake 18-21 minutes until golden brown and a toothpick inserted in center of a muffin comes out clean.

Step 9: Let cool in pan 5 minutes before transferring to wire rack.

Optional Glaze: 1 cup powdered sugar mixed with a little heavy cream, or whole milk, and 1/2 teaspoon vanilla extract.

PRO TIP:

Don’t overmix the batter! Stir just until the flour disappears. Over mixing makes tough, dense muffins.

Storage and Reheating:

Storage: Store in an airtight container in an airtight container for up to 3 days. 

Reheating: Warm leftover muffins in the microwave for 15-20 seconds or in a 300°F oven for 5 minutes.

Freezing: These freeze great! Cool completely, wrap individually in plastic wrap, and freeze in a freezer bag for up to 3 months. Thaw at room temperature or microwave from frozen.

  • Nuts: Add chopped pecans or walnuts to the streusel topping.
  • Glaze: Top with a drizzle of vanilla glaze or lemon glaze after cooling.
