Long time no post, yeah I know. So sorry!  Things have been crazy here getting ready for the end of the school year.  All school work and reports graded and recorded.  Next years curriculum already researched and bought.  Another year of homeschooling fails and successes under my belt.  I’m SOOOOO ready for school to be out.  That means more time to cook/bake/grill and blog!!!!  Sidenote: I won’t be the one grilling, after having a gas grill literally blow up in my face, I’ll leave that to the pro (LittleChefsDad), but I’ll enjoy the grilled food!!

In case the grill in the face comment got you all excited and wondering what happened, it’s pretty straight forward- it blew up in my face!  Someone said it was user error, which I’m sure it was, but geez louise, exploding grill + face= NOT FUN!

 

 

 

Anywhoo, this is my most favorite pie and it’s super easy because you just buy all the ingredients and mix them in a bowl and dump in a store bought pie crust!  Easy peasy!!  Even kids can make this one!  I’ve used fresh squeezed lemon juice and lemon juice from a container.  I couldn’t tell a big difference at all. But one thing I do add is fresh grated lemon zest, now that adds a wonderful punch!

 

 

I found this recipe at Allrecipes.com.  It’s been a staple in my recipe box for years now!  Try it out and you’ll love it too 🙂

 

Easy Lemon Pie

Ingredients
  

  • 1 14oz can sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 8oz frozen whipped topping (Cool Whip), thawed
  • 1 9" prepared graham cracker crust

Instructions
 

  • In bowl, combine milk and lemon juice; mix till smooth (it will begin to thicken)
  • Fold in cool whip topping
  • Spoon into crust
  • Chill in fridge
