You’ll need the following ingredients to make this amazing Velveeta Rotel Dip:

  • Rotel Diced Tomatoes & Green Chilies 
  • Velveeta
  • Heavy cream

INGREDIENT NOTES:

  • Velveeta: This processed cheese melts perfectly for a smooth, creamy dip. I’ve used a generic store brand with good results too!
  • Rotel: I LOVE using Rotel tomatoes! It’s my favorite tomato product, I’m pretty crazy about it, LOL! Here’s my favorite Pasta Recipe using it: Easy Rotel Pasta, clever name, eh? 
  • Heavy Cream: Makes the dip extra creamy. You can leave it out entirely and the dip will still be amazing!

HOW TO MAKE VELVEETA CHEESE DIP STEP-BY-STEP:

STEP 1: In a medium saucepan, combine the undrained Rotel tomatoes, cubed Velveeta and heavy cream.

STEP 2: Cook over medium heat, stirring frequently for about 5 minutes, until the Velveeta is fully melted and the mixture is smooth.

STEP 3: Serve the dip warm with tortilla chips, crackers, or fresh veggies for dipping.

Pro Tip:

If you want to keep the dip warm for longer, transfer it to a small slow cooker on the “keep warm” setting so it stays smooth and melty during your party.

  • 1 10-ounce can Rotel® Diced Tomatoes & Green Chilies, undrained (I like to use MILD)
  • 16 ounces Velveeta, cut into 1/2-inch cubes
  • 1/4 cup heavy cream

Instructions
 

  • Combine undrained Rotel tomatoes, Velveeta cubes and heavy cream in a medium saucepan.
  • Cook over medium heat for about 5 minutes or until Velveeta is completely melted and mixture is blended, stirring frequently.

  1. I follow the same recipe but, instead also add 1 lb ground chuck roast browned and drained, then put all the ingredients in a crock pot and put it on high until all the cheese is melted, then switch to warm. Works great… And now I use two cans of Ro Tel as like it a little warmer.. This will also freeze well.
