Amazing Gluten Free Buttermilk Pancakes

My kids have long had a love affair with pancakes, not just any pancakes, but Grandma’s Pancakes, they are legendary!  But sadly my sweet loving gluten free guy can’t eat them.  One day he wanted to fix him some pancakes while I was fixing dinner.  Strange request, but when you have a sugar craving, you have a sugar craving!  He asked if he could fix them on the griddle all by himself.  Of course I said yes! If you know me, I’m a HUGE advocate for kids in the kitchen.  Growing up I wasn’t really allowed to do anything, so I want to encourage my kids to feel free to jump in whenever they want!

I normally just modify regular recipes by substituting gf flour for regular, usually that suffices.

This time I wrote the recipe down for him and when I halved it, I got the measurements wrong.  I’m telling you, I still can’t walk and chew bubble gum at the same time. LOL! Looking back at Grandma’s original recipe, I’m not sure how I got this recipe, but regardless, it’s amazing!  Turns out my blunder was a very tasty mistake!

This recipe is so easy, all my kids can whip it up, yes, even my 4 year old twins!  Pancakes are such an easy and fun recipe for the little ones to start out with.  Hands down, the most requested pancake add in is chocolate chips!  I don’t complain, it’s my favorite also!  A close second is blueberry!

Pancakes also freeze wonderfully.  Let hot pancakes cool completely before putting single file into a Ziplock baggie. If you prefer to stack, remember to use wax paper, or parchment paper between each pancake.  Toast in a toaster on low heat, using the freezer button if you have one, twice. The first time around only gets the outsides warm, but the middle is still cold.

On a side note, this was the very first drip shot I did!  Just look at that yummy maple syrup!  My hand model for the day was Littlechef#3.  I grabbed the first kid big enough to help, LOL!
