This is probably the quickest and easiest soup I fix!  If you read yesterday’s post about the Grilled Chicken Tacos, then you’ll understand exactly why this soup containing baked potatoes is so quick.  It’s LittleChef2’s favorite soup.  He knows every time LittleChefsDad grills, soup is on the menu the next day. I love that it’s gluten free.

I always double the recipe and offer toppings. When time permits, bacon is always a hit!

Toppings: cooked chopped bacon, green onions, sour cream, extra cheese

Baked Potato Soup

A creamy hearty soup that is a family favorite. Feel free to substitute heavy cream for the milk.

Cook Time 1 hour 15 minutes
Total Time 1 hour 20 minutes

Ingredients
  

  • 3 to 4 potatoes cooked (peeled and diced)
  • 3 1/2 cups milk
  • 4 ounces cream cheese
  • 2 TBLS butter
  • 1 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1/2 tsp pepper
  • 4 ounces cheddar cheese shredded

Instructions
 

  • Combine all ingredients, minus cooked potatoes, in saucepan.
  • Stir till cream cheese melts. Do not bring to boil.
  • Add potatoes and mix in.
