This Velveeta Sausage Cheese Dip is the one I make for every game day, every potluck, and every time someone asks me to bring an appetizer. It uses heavy cream and sour cream in addition to the Rotel, which gives it a noticeably richer and thicker result than the basic three-ingredient version most people make.

This is the dip I make for every game day and every party. It doesn’t look like much in the skillet but one taste and nobody puts the chips down. The sour cream stirred in at the end is what makes it different from the standard two-ingredient Velveeta dip. It adds a creaminess that rounds out the processed cheese flavor. I make double batches regularly because a single batch disappears fast with a crowd!

Ingredients

Pork sausage (1 lb): I use mild but hot sausage works if your crowd likes heat. Jimmy Dean or any bulk breakfast sausage works fine. Brown it fully and drain all the grease before adding anything else, leftover grease makes the dip oily and can cause the cheese to separate.

Velveeta (16 oz block): Cut it into roughly 1-inch cubes before adding. Smaller cubes melt faster and more evenly. Don’t add it in a large block, it takes much longer and the outside melts before the inside does, which causes uneven texture.

Rotel (10 oz can, undrained): Use the liquid too, it’s part of what keeps the dip from getting too thick. Original Rotel for medium heat, mild for a crowd with kids, hot if you want a kick.

Heavy whipping cream (splash): This is what makes this version richer than the basic three-ingredient Rotel dip. It also keeps the dip from getting grainy as it sits.

Sour cream: Adds a slight tang and extra creaminess. Stir it in at the very end off the heat, adding it while the pan is too hot can cause it to break.

Chili powder and garlic powder: Deepen the flavor beyond what the sausage and Rotel alone provide. Don’t skip them, the dip tastes flat without them.

How to Make Velveeta and Sausage Cheese Dip

Step 1: Cook sausage in a large skillet over medium heat, breaking it into fine pieces as it browns. Drain all excess grease thoroughly, this is important. Leftover grease causes the cheese to separate and makes the dip oily.

Step 2: Reduce heat to medium-low. Add cubed Velveeta, undrained Rotel, and heavy cream to the skillet with the sausage. Medium-low is not optional here, Velveeta scorches quickly on higher heat and once it scorches you can taste it in the whole dip.

Step 3: Stir constantly as the cheese melts, scraping the bottom of the pan. The whole melting process takes about 5 to 8 minutes. Don’t walk away.

Step 4: Once fully melted and smooth, remove from heat and stir in sour cream. Adding it off the heat prevents it from breaking and keeps the texture smooth.

Step 5: Serve immediately with tortilla chips, or transfer to a slow cooker set to warm to keep it at serving temperature for up to 2 hours.

If the sausage dip thickens too much as it sits, stir in a splash of heavy cream or milk to loosen it back up. Don’t add water! It dilutes the flavor. A slow cooker set to warm is the best way to serve this at a party because it keeps the consistency perfect for hours without any attention.

How Long Does This Sausage Dip Keep?

Storage: Store leftovers in the refrigerator, in an airtight container. It can be kept for up to 3 days.

Reheating: Warm in a saucepan over medium-low heat stirring occasionally. Add a splash of milk if it’s too thick. Microwave works too, stir every 30 seconds.

Freezing: Freeze for up to 3 months. Thaw overnight in the fridge and reheat gently on the stovetop stirring frequently.

What Can I Add to Sausage Cheese Dip

Black beans (1 can, drained): Makes the dip heartier and stretches it further for a bigger crowd. Doesn’t change the flavor much but adds texture and makes it more filling as a meal-adjacent dip rather than just a snack.

Cream cheese (4 oz, softened): Add it with the Velveeta. Makes the dip noticeably thicker and richer with a slight tang. Good if you want something closer to a queso dip than a pourable cheese sauce.

Jalapeños (fresh or pickled): Fresh give you more heat, pickled give you more tang. Add them with the Rotel. About two fresh jalapeños diced fine is enough for noticeable heat without overwhelming the cheese flavor.

Corn (1 can, drained): Adds sweetness and texture. Works especially well if you’re serving this to kids who might find the sausage too spicy, the corn balances it.

Hot sauce: Stir in at the end to taste. Easier to control the heat level than switching to hot sausage, which changes the whole flavor profile.

Why is my Velveeta dip grainy or oily?

 Almost always one of two things. Either the heat was too high and the cheese separated, or the sausage grease wasn’t fully drained before adding the cheese. Velveeta is forgiving but it has limits! Keep the heat at medium-low and stir constantly. If it does go grainy, a splash of heavy cream stirred in vigorously over low heat can sometimes bring it back together.

Can I make Velveeta sausage dip in a slow cooker? 

Yes. Brown and drain the sausage first on the stovetop, don’t skip this step in the slow cooker version or the dip will be greasy. Then transfer everything to the slow cooker on low for 1 to 2 hours, stirring occasionally until melted. Keep it on warm for serving. This is actually the best method for parties because it stays at perfect consistency for hours.

Can I make this ahead of time? 

Yes. Make it fully, let it cool, and refrigerate for up to 3 days. Reheat on the stovetop over low heat with a splash of cream or milk stirred in to restore the texture. Don’t microwave it in a big batch, reheat slowly on the stove for the best result.

How do you keep Velveeta dip warm at a party? 

Transfer it to a slow cooker on the warm setting. It stays smooth and dippable for hours without scorching. Stir it occasionally and add a splash of milk if it thickens up.

What is the difference between Velveeta dip and queso?
